Vegan Spread

Heliaflor® is particularly suitable as an emulsifier and thickener as well as for protein enrichment in vegan spreads. From the start we have been working with manufacturers on the development of Heliaflor® to ensure these functional properties. In addition to this we tested these properties and defined them scientifically at the University of Applied Sciences Albstadt-Sigmaringen.

The results are a number of recipes that Heliaflor® is particularly suitable for. The recipes can be easily made using a Thermomix® or other food processor. The support of tangy flavors through Heliaflor® is best emphasized in spicy vegan spreads.

The basic recipe can be prepared with both types of Heliaflor®: Heliaflor® 45 and Heliaflor® 55. One major difference is the fact that Heliaflor® 55 is more neutral in taste and therefore allows other flavors to express themselves more. In addition it is lighter in color and therefore allows more individual coloring of products. Last but not least Heliaflor® 55 contains almost no fat and therefore it’s lower in calories than Heliaflor® 45.

Recipe with Heliaflor® 45 or 55

Ingredients  
Water 300 g
Shea butter 60 g
Heliaflor® 45 or 55 40 to 50 g
Onions 15 g
Potato Flour 17 g
Lemon Juice 1 g
Salt 1/2 tsp
Garlic granules 4 g
Roasted onions 20 g
Spices mix e.g. majoram, nutmeg, pepper, cumin, herbs 20 g

Preparing the spread

Preparing the spread in Thermomix®
Weigh all the ingredients and prepare them. You can substitute organic sheabutter with organic palm fat.
First melt the sheabutter together with the onions and roast them to taste.
Put the other ingredients in the Thermomix® and mix for one minute on level two. Next turn the Thermomix® to level 3 and the temperature to 70°C. As soon as the temperature reaches 50°C slowly add the molten sheabutter and onions. Then put the Thermomix® to level 4 and mix for at least 3 minutes on 80°C.
Put the finished mix in a glass with a screw cap and put it in the fridge. After 2-3 hours the spread is finished.

Alternative preparation
Weigh all the ingredients and prepare them. You can substitute organic sheabutter with organic palm fat.
First heat the water in a pot. Add all ingredients except sheabutter and onions during mixing the mass. As soon as the mass is cooking, take the pot from the cooker.
Melt sheabutter in another pot and add to the prepared mass. Mix until there is a creamy mass. Add onions and cook another minute.
Put the finished spread in a glass with a screw cap and put it upside down in the fridge. After 2-3 hours the spread is finished.

Tips
Lemon juice prevents unwanted discoloration of spread on the surface. Perhaps added amount has to be increased. Alternatively vinegar can be used.
With the use of Heliaflor® yeasts can be replaced completely. Heliaflor® contains glutamic acid by nature. This amino acid gives finished products a slightly aromatic taste.
